BEST SPLIT PEA SOUP

A Moosewood recipe variation.



Ingredients:
1 1/2 cups dry green lentils
3 1/2 cups water (more, if needed)
1-2 bay leaf
2 tsp. salt

Bring to a boil, then turn to med-low and simmer, covered, 4hrs.

Added 1 cup water during simmering.

1 med. onion (chopped)
3 cloves garlic
1 c. celery (chopped)
1 sml potato (very thinly sliced)
2 c. carrots (sliced)
2 tbsp. olive oil
little water (if necessary to steam)

Saute vegetables in olive oil (and water if needed) until tender. Add to soup and reheat to med. Add the following ingredients.

Another 1 cup water
1/4 cup dry red wine
1/4 tsp. dry mustard
1/4 tsp. thyme
a few drops of sesame oil (optional)

Let simmer again for 30min. Just before serving, add 3 tbsp vinegar.

3 tbsp vinegar

Serve.
