FRENCH ONION SOUP



Ingredients:
2 tbsp butter
2 white onions, diced
2 yellow onions, diced
sprinkle of sugar
1/4-1/2 cup red wine
1 tsp worcheshire sauce
4 cups beef broth

hard loaf bread (such as sourdough)
gruyere cheese

TAKES 1hr30min - 2hr

Dice onions, sprinkle with sugar, and set aside. Melt butter in a pot. Add onions and carmelize until golden, stirring occasionally. Deglaze with red wine. Add beef broth, salt and pepper, worcheshire sauce, and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Cut bread into slices and place on baking sheet. Toast in broiler, and then cut into crouton sized pieces. Cover bread pieces with shaved cheese and place in warm oven until cheese is melted. Ladle soup into bowls and top with cheesy bread.
