with spinach and tomatoes... from Real Simple.
Ingredients:
1 tbsp olive oil
2 cloves garlic, finely chopped
1/2 cup onion
1 14.5oz can petite diced tomatoes (drained)
2-3 cups spinach (trimmed)
4 eggs, separated* (keep yolks whole)
2oz feta cheese
*Recipe calls for eggs to be separated to acheive photo to the left. However, I have also made this by scrambling the eggs and it is just as tasty!
Heat oven to 400oF, and heat oil in a skillet over medium high. Add garlic and onion to skillet, cook briefly, then add tomatoes, salt, and pepper. Simmer for 3-4 minutes. Add spinach and cook until slightly wilted. Mix together in pan and pour evenly into a small baking or casserole dish (1quart). Add crumbled feta on top. Beat the egg whites until foamy and pour over other ingredients in the baking dish. Place whole yolks on top and bake, uncovered, for approximately 20min. Best served with a hearty toast such as rye.
I ate this for dinner, but it would also - obviously - make a great breakfast! Note: This is only meant to serve two people, make sure to double the recipe for more.
