FISH TACOS

The original recipe for this dish can be found here. The recipe below is my variation and may (or may not!) deviate from the original.




Spring is finally here, and in Delaware the temperatures this past weekend and week have been divine. These tacos (below) were a first time test, and they were pretty good. Some room for improvement includes adding black beans and guacamole (or avocado slices) to the taco, as well as a side of some kind. Maybe some sort of cabbage slaw - an apple cabbage slaw? Something to freshen it up a bit more...

Ingredients:
white fish (e.g. cod) frozen is acceptable
flour
egg
fry daddy or skillet full of canola oil

fresh salsa
sour cream
scallions
avocado
beans
