Salad Ingredients:
3 heads romaine lettuce
1/4 c red onion (optional)
1/4 c pine nuts
10-12 cherry tomatoes (optional)
1-2 breasts grilled or blackened chicken
shaved parmesan
Dressing Ingredients:
1/2 c olive oil
3-5 cloves garlic
2 lemons (juiced)
1 tbsp horseradish sauce
1 tbsp whole grain mustard
3 anchovies
salt and pepper
This is my favorite ceasar salad dressing recipe. There's no raw egg and no gobs of mayo or other creams, and it's still a delicious dressing.
Chop garlic and anchovies finely before combining all dressing ingredients and mixing well with a whisk (works best in a measuring cup). Set aside.
Begin grilling or blackening chicken breasts according to your preference. Meanwhile, chop, rinse, and spin dry lettuce leaves. Chop tomaoes and onions if desired and toast pine nuts slightly in a small pan on the stove (medium heat, make sure to toss frequently or they'll burn). When chicken is finished, cube. Toss dressing with lettuce, pine nuts, onions/tomatoes, and parmesan cheese. Add chicken on top. Enjoy.
