ORANGE CHICKEN WITH POTATOES

From Real Simple... may require some changes.

I've only tried this recipe one time, and it turned out pretty well. However, I don't think I would use the honey next time, and the orange was a little overpowering. I would also consider adding some carrots. You can't see the chicken in this photo, but it was de-lish.

Ingredients:
2 chicken breasts (or more)
salt and pepper
2 onions, quartered
1lb small red potatoes
1 small butternut squash, peeled, seeded, and cut into 1in pieces
10+ cloves of garlic, peeled
1 orange cut into 1/4in rings
2 cups chicken broth
1 tbsp honey
8 fresh sprigs thyme

Trim chicken, and rinse with water. Pat dry, salt and pepper, and place in the slow cooker. Add vegetables and sprinkle thyme and honey on top. Cover with broth (it will not submerge all vegetables, depending on the size of your slow-cooker). Cover and cook on low for 6-7 hours until vegatables are tender and chicken is cooked through. I used a large slow cooker. Smaller cookers may require a longer cooking time. Note: Original recipe says to cook on high for 2-3hrs.

  2. Kathy - I didn't know you were on here, I would have responded sooner. I need to put more slow-cooker recipes up because, to be honest, this isn't my favorite (see the comments at the beginning of the post). I'll try to add more recipes soon.
